Richard from Texas writes... "Living in Fort Worth Texas we have a grocery store called Central Market. They do a Hatch Chili festival that runs for two weeks. They roast them outside in a huge roaster that spins around over open wood flames. Play live music and really celebrate. I'll post some pics to your Facebook page."
Ken from Illinois writes... "Now you're talking my kinda chili. The "Big Jim" that
you mentioned, was developed by the University of New Mexico, and exceeds 12" in length and 6+ in girth, depending on Mother Nature. They are very flavorful, and can be very spicy, due to where they are in the fields. Hatch uses flood irrigation from the Rio Grande river for the water in their fields." "When telling you about this chili, I have to say, the scoville for these chilis would depend on where in the field they are. As you probably know, the lesser amount of
moisture, when growing chili peppers, makes a very hot pepper. So, the edges of the fields sometimes don't get all the water that other places will get."
