After years of sampling pit barbecue at Texas's most legendary joints we perfected a sauce that pays homage to those smokehouses while introducing a unique chili, the Pasilla de Oaxaca, that is medium-hot and known for it's rich flavor. Preheat grill to medium heat. In a large bowl combine the ground chuck, black pepper, dehydrated onion flakes and 1/4 cup of the Texas Pit BBQ sauce. Using your hands, blend the mixture well, distributing ingredients thoroughly. Separate the meat mixture into 8 equal portions; pat meat into firm burgers. Place burgers on preheated grill and cook, basting with additional Texas Pit BBQ sauce each time you turn the burger. Grill for about 8 minutes per side. To serve, assemble burgers with your favorite condiments. Serves
