This recipe has become one of my favorites - quick, easy, fresh, and a reminder of Garbo's fish tacos in Key West. Make the Tortillas ahead of time and warm them in an oven to make the recipe even quicker. Healthy, easy, and quick - what could be better?

Ingredients:
Tortilla
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 3/4 cup water
- 3 tablespoons olive oil
Filling
- 2 cups coleslaw mix
- 1-1/2 teaspoons canola oil
- 1-1/2 teaspoons lime juice

In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes.
Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7-in. circle.
In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, about 1 minute on each side. Serve warm.
In a small bowl, toss coleslaw mix with oil and lime juice; refrigerate until serving. In another bowl, fold together Green Lava Pepper Sauce, sour cream, onion, cilantro, salt and pepper.
Sprinkle tilapia with salt and pepper. In a large nonstick skillet, heat oil over medium-high heat. Add tilapia; cook until fish just begins to flake easily with a fork, 3-4 minutes on each side. Serve in tortillas with coleslaw, Green Lava Pepper Sauce mixture above, and desired toppings.
